My Day Off
Memorial Day was wonderful. In fact, the whole gosh darn holiday weekend was awesome. I feel rested and ready to hit the ground running this week. Here's what made Monday so great:
The very best days off ALWAYS start with a kick-ass breakfast (and good Saturdays, and Sundays, and good work days, too...basically, I classify any day as pretty darn good when it starts out with a relaxed, sit down breakfast at home). I love making this, time and time again--and it's WW friendly--only 7 points. Here's what you need: (recipe for 1)
- small, all-butter croissants--we get them at Walmart--they come in a big plastic container in the bakery section, and there are normally 10-12 of them. They go stale quickly, so leave a few out and then freeze the rest. If you take them out of the freezer the night before, they're perfectly fresh and ready to go the next morning. Best part about them? They're only 2 points.
- omelette: 1 egg, beaten, 1/4 cup of egg beaters, freshly snipped chives, salt and pepper. 3 points.
- 1 slice fat free american cheese. 1 point.
- 2 slices reduced fat bacon. 1 point.
After eating, we redid the budget without arguing.
Hubster booked me tickets to fly to Boston with him at the end of June. He's going to a conference there (presenting a poster--go Hubster!), and we're going to make it into a mini-vacation. I'm really excited about it. Holla tasty oysters and Sam Adams!!!

I laid out in the sun in the backyard wearing nothing but underwear (I was too lazy to put on my bikini). I also forgot to put on sunscreen--a fact I made note of at exactly 9:54 p.m., when I started to feel quite crispy around the edges...
We got 2.5 lbs of fresh Bing Cherries at the grocery store--my favorite. I could eat them all day...
We watched a bunch of episodes of the Office--I LOVE that show...
In other news, the weekend itself also rocked. I practiced rolling at Sherando (I think I may have perfected the hip snap), spent a very nice day with Mandy and Greg, and got treated out to dinner--Guad anyone? We also saw Prince Caspian, ate an absolutely amazing dinner at Verbena, and I bought myself a book on crochet. I hope to be making large cheesy yarn flowers by next weekend!
