WW Banana Bread

This really is one of the easiest recipes to make, plus it's super good, and good for you. You could actually whip this up relatively quickly in the morning, especially on a weekend when you have company over. It tastes great fresh out of the oven with some yogurt or fruit. It also freezes well. This IS a Weight Watchers recipe. Please don't let this discourage you from trying it--it isn't diet food, it's GOOD food. And I guarantee you, you'll make it again. This recipe makes 10 servings, at 4 points each.

You'll need the following:

  • 1 medium loaf pan (I have two pictured because I made two very shall loaves this go-round. I won't do that again. It's much nicer when the loaf is deep--it makes a tastier serving).
  • 1 1/4 cup all purpose flour
  • 1/2 cup unpacked brown sugar
  • 1/2 tsp table salt
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 3 tsp canola oil
  • 1 large egg, beaten
  • 2 egg whites, beaten
  • 3 large (very ripe, if possible) bananas
  • I cup uncooked old fashioned oats
  • 1/4 walnuts, crushed for topping

Preheat oven to 350 degrees. Combine dry ingredients, then add oil, eggs, bananas and oatmeal.

Put into large greased loaf pan.

Bake loaf (or loaves) 40-45 minutes, until the top of the loaf is firm to the touch.
